Ingredients

  • 8 slices soft, white sandwich bread (or brioche)
  • 4 ounces cream cheese, softened
  • 3 tablespoons granulated sugar, divided
  • 1 teaspoon vanilla extract, divided
  • 1 cup strawberries, finely diced (or blueberries, raspberries, or apples)
  • 2 large eggs
  • 1/2 cup milk (dairy or unsweetened almond milk)
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons melted butter (or spray oil) for brushing
  • 1/4 cup cinnamon sugar for coating (optional, for rolling after cooking)
  • Maple syrup or powdered sugar, for serving

Instructions

  • Prep the bread: Trim crusts off each slice. Use a rolling pin to flatten each piece into a thin sheet. This helps the rolls hold their shape.
  • Make the filling: In a small bowl, mix cream cheese, 1 tablespoon sugar, and 1/2 teaspoon vanilla until smooth. Fold in the diced strawberries. Taste and adjust sweetness if needed.
  • Fill and roll: Spread about 1 tablespoon of cream cheese mixture along one edge of each bread slice. Roll up tightly, seam-side down. Repeat with all slices.
  • Mix the custard: In a shallow dish, whisk eggs, milk, remaining 2 tablespoons sugar, remaining 1/2 teaspoon vanilla, cinnamon, and a pinch of salt.
  • Dip quickly: Lightly brush or spray the air fryer basket with oil. Dip each roll up in the custard, turning to coat. Let excess drip off so they don’t get soggy.
  • Load the basket: Place roll ups seam-side down in a single layer, leaving space between them. Brush tops lightly with melted butter or spray oil for extra crispness.
  • Air fry: Cook at 375°F (190°C) for 6–8 minutes, turning halfway, until golden and crisp. Timing can vary by air fryer, so check at 5 minutes.
  • Finish: While hot, roll the cooked roll ups in cinnamon sugar, if using. Alternatively, dust with powdered sugar.
  • Serve: Plate with warm maple syrup, extra berries, or a dollop of yogurt.
