Make the filling: In a small bowl, mix cream cheese, 1 tablespoon sugar, and 1/2 teaspoon vanilla until smooth.
Fold in the diced strawberries. Taste and adjust sweetness if needed.
Fill and roll: Spread about 1 tablespoon of cream cheese mixture along one edge of each bread slice. Roll up tightly, seam-side down.
Repeat with all slices.
Mix the custard: In a shallow dish, whisk eggs, milk, remaining 2 tablespoons sugar, remaining 1/2 teaspoon vanilla, cinnamon, and a pinch of salt.
Dip quickly: Lightly brush or spray the air fryer basket with oil. Dip each roll up in the custard, turning to coat. Let excess drip off so they don’t get soggy.
Load the basket: Place roll ups seam-side down in a single layer, leaving space between them.
Brush tops lightly with melted butter or spray oil for extra crispness.
Air fry: Cook at 375°F (190°C) for 6–8 minutes, turning halfway, until golden and crisp. Timing can vary by air fryer, so check at 5 minutes.
Finish: While hot, roll the cooked roll ups in cinnamon sugar, if using. Alternatively, dust with powdered sugar.
