Cook the beef: Heat a skillet over medium-high. Add ground beef and diced onion.
Cook, breaking up the meat, until browned and cooked through, 6–8 minutes. Drain excess fat if needed.
Season the mixture: Stir in garlic, ketchup, mustard, Worcestershire, salt, pepper, and smoked paprika. Cook 1–2 minutes to let flavors meld.
Taste and adjust seasoning.
Prep your station: Lay out tortillas. Place a slice of cheese in the center of each. Spoon about 1/2 cup of the beef mixture over the cheese.
Add fixings: Top with pickles, a sprinkle of lettuce, and tomatoes if using.
Add a light drizzle of your favorite sauce. Don’t overfill or the wrap won’t seal well.
Fold the wraps: Fold the sides in, then roll tightly from the bottom up to form a sealed burrito-style wrap. Press gently to secure.
Preheat the air fryer: Set to 380°F (193°C) for 3 minutes.
Lightly spray the basket and the tops of the wraps with cooking spray for extra crispness.
Air fry: Place wraps seam-side down in a single layer. Cook at 380°F for 6–8 minutes, flipping halfway, until golden and crisp and cheese is melted.
Serve: Let rest 2 minutes before slicing in half. Serve with extra pickles, a side salad, or fries, plus your favorite dipping sauce.
