Prep the zucchini: Wash and dry the zucchinis.
Slice into 1/4-inch rounds. Thicker slices can stay watery; aim for even cuts so they cook at the same rate.
Season lightly: Pat slices dry with paper towels. Toss or brush with a little olive oil, a pinch of salt, black pepper, and a light dusting of garlic powder.
Preheat the air fryer: Set to 380°F (193°C) for 3–5 minutes.
A hot basket helps get those edges just right.
Par-cook the slices: Arrange zucchini rounds in a single layer in the basket—no overlap. Air fry for 4–5 minutes until they’re just tender and starting to dry on top.
Add the sauce: Flip the slices. Spoon a small dab of marinara on each—about 1/2 to 1 teaspoon.
Don’t overdo it; too much sauce makes them slippery.
Top with cheese and extras: Sprinkle mozzarella, a pinch of Parmesan, and a tiny shake of Italian seasoning. Add pepperoni or other toppings if you like. Press toppings gently so they stay put.
Finish cooking: Air fry at 380°F for 3–5 minutes more, until cheese is melted, bubbly, and just golden in spots.
Cook time varies by air fryer and slice thickness.
Garnish and serve: Let them cool for 1–2 minutes to set the cheese. Sprinkle with red pepper flakes and fresh basil if using. Serve warm.
