Air Fryer Turkey Patties - Juicy, Quick, and Weeknight-Friendly

Ingredients

  • Ground turkey: 1 to 1.25 pounds (93% lean is ideal; 99% extra lean can be used with adjustments).
  • Egg: 1 large, for binding.
  • Breadcrumbs: 1/3 cup plain or panko. Gluten-free works too.
  • Onion: 1/4 cup finely grated or minced.
  • Garlic: 2 cloves, minced (or 1 teaspoon garlic powder).
  • Worcestershire sauce: 1 tablespoon for depth.
  • Dijon mustard: 2 teaspoons for tang.
  • Olive oil: 1 teaspoon for brushing or spraying.
  • Salt and pepper: About 3/4 teaspoon kosher salt and 1/2 teaspoon black pepper.
  • Optional add-ins: 1 teaspoon paprika, 1 teaspoon Italian seasoning, chopped parsley, or a pinch of red pepper flakes.

Instructions

  • Prep the air fryer: Preheat to 375°F (190°C) for 3–5 minutes. Lightly oil the basket or use a perforated parchment liner.
  • Mix the base: In a large bowl, add ground turkey, egg, breadcrumbs, grated onion, garlic, Worcestershire, Dijon, salt, pepper, and any optional spices. Stir gently with a fork or your hands until just combined. Don’t overmix.
  • Shape the patties: Divide into 4 equal portions for larger patties or 6 for sliders. Form into 1/2-inch thick rounds. Press a small dimple in the center of each to prevent puffing.
  • Light oil: Brush or spray the tops with a thin coat of olive oil. This helps browning and prevents sticking.
  • Air fry, first side: Place patties in a single layer, spaced out. Cook 6–7 minutes at 375°F.
  • Flip and finish: Flip patties. Air fry 4–6 more minutes, until internal temperature reaches 165°F (74°C). Use an instant-read thermometer for accuracy.
  • Rest and serve: Let patties rest 3 minutes. Serve on toasted buns with your favorite toppings, or pair with veggies and grains.
  • Optional cheeseburger move: In the last minute, add a slice of cheese and close the air fryer to melt.
