Ingredients

  • 14–16 oz extra-firm tofu, drained
  • 1 tablespoon neutral oil (avocado, canola, or grapeseed)
  • 2 tablespoons soy sauce or tamari (use low-sodium if preferred)
  • 1 tablespoon maple syrup or brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 teaspoon toasted sesame oil
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 teaspoon grated fresh ginger (or 1/2 teaspoon ground ginger)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional, for a subtle “grill” note)
  • 1 teaspoon cornstarch or arrowroot (for light crisping)
  • Pinch of red pepper flakes or 1/2 teaspoon sriracha (optional heat)
  • Lemon or lime wedges, for serving
  • Chopped scallions or sesame seeds, for garnish (optional)

Instructions

  • Press the tofu: Wrap the block in a clean kitchen towel or paper towels. Place a heavy skillet or a few cookbooks on top and press for 15–20 minutes. This removes moisture and helps create a steak-like texture.
  • Slice into steaks: Unwrap and slice the tofu crosswise into 2–4 slabs, about 1/2–3/4 inch thick. Thicker slabs feel more “steak-like.”
  • Mix the marinade: In a bowl, whisk soy sauce, maple syrup, rice vinegar, toasted sesame oil, minced garlic, ginger, black pepper, smoked paprika, and red pepper flakes if using.
  • Coat and rest: Add tofu slabs to the bowl and gently coat. Let sit 10–15 minutes. For deeper flavor, marinate up to 1 hour in the fridge. Don’t over-marinate overnight; tofu can get too salty.
  • Add cornstarch and oil: Sprinkle cornstarch over both sides and lightly brush or rub with the neutral oil. This combo is key for crisp edges.
  • Preheat the air fryer: Heat to 375°F (190°C) for 3–5 minutes. A hot basket prevents sticking.
  • Arrange the steaks: Place tofu in a single layer in the basket. Don’t crowd. Work in batches if needed.
  • Air fry, flip, finish: Cook 8–10 minutes, flip carefully, then cook another 6–8 minutes until the surface is deep golden and slightly blistered. Cook time varies by air fryer.
  • Glaze (optional but great): While the tofu finishes, simmer leftover marinade in a small pan for 1–2 minutes to thicken. Brush onto the tofu in the last 2 minutes for a sticky, glossy finish.
  • Serve: Rest 2–3 minutes. Squeeze with lemon or lime, scatter scallions or sesame seeds, and plate with rice, noodles, greens, or roasted vegetables.
