Preheat the air fryer: Set your air fryer to 375°F (190°C). Let it heat while you prep the fillings.
Cook the beef: In a skillet over medium heat, cook the ground beef until browned, 6–8 minutes.
Drain excess fat. Stir in taco seasoning and water. Simmer 2–3 minutes until saucy.
Taste and adjust salt.
Warm the beans: In a small pot or microwave-safe bowl, warm the refried beans until spreadable. Season with a pinch of salt and pepper if needed.
Crisp the tortillas: Lightly brush or spray tortillas with oil. Air fry in batches for 2–4 minutes per side, flipping once, until lightly golden and crisp but not rock-hard.
Watch closely—thin tortillas can brown fast.
Build the bottom layer: Place one crisp tortilla on a cutting board. Spread a thin layer of refried beans (about 2–3 tablespoons) and top with a layer of seasoned beef (2–3 tablespoons). Place a second tortilla on top to create a “sandwich.” Repeat for all pizzas.
Add the “pizza” topping: Spread a spoonful of enchilada or taco sauce over the top tortilla.
Sprinkle generously with shredded cheese.
Air fry to melt: Carefully transfer assembled pizzas to the air fryer basket. Air fry at 350°F (175°C) for 3–5 minutes, until the cheese is melted and bubbly. Work in batches to avoid crowding.
Finish with toppings: Remove and top with diced tomatoes, black olives, and green onions.
Add jalapeños, sour cream, cilantro, or hot sauce if you like.
Slice and serve: Use a pizza cutter or sharp knife to slice into quarters. Serve immediately while crisp.
