Preheat the air fryer. Set it to 400°F (200°C) for 3–5 minutes so it’s hot and ready.
A preheated basket helps you get that light char.
Prep the corn. Pat the ears dry. Brush or rub with oil and season with salt and pepper. If your air fryer is small, cut the cobs in half to fit.
Cook the corn. Place the corn in a single layer.
Air fry at 400°F for 10–14 minutes, turning every 3–4 minutes. You’re looking for tender kernels with some browning and blistering. Times vary by model, so keep an eye on it.
Make the sauce. In a bowl, stir together mayonnaise, sour cream, lime juice, chili powder, smoked paprika (if using), garlic, and a pinch of salt.
Taste and adjust. You want a bright, tangy, slightly spicy sauce.
Optional butter brush. For extra richness, lightly brush the hot corn with melted butter right after it comes out of the air fryer.
Dress the corn. Slather each cob with the sauce while it’s still warm. Sprinkle generously with Cotija and cilantro.
Dust with extra chili powder or Tajín. Add a squeeze of lime.
Serve right away. Street corn is at its best hot and messy. Provide napkins and lime wedges.
Enjoy as a side or light snack.
Off-the-cob option (esquites style): Air fry frozen corn (tossed with oil, salt, pepper) in a perforated foil “tray” at 400°F for 8–10 minutes, shaking once. Mix warm corn with the sauce, cheese, cilantro, and lime in a bowl and serve with spoons.
