Ingredients

  • 1 to 1.5 pounds cherry or grape tomatoes (or small Roma/plum tomatoes, halved)
  • 1.5 to 2 tablespoons olive oil
  • 3/4 to 1 teaspoon kosher salt (or 1/2 teaspoon fine sea salt)
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning or dried oregano
  • 2 to 3 garlic cloves, minced (or 1/2 teaspoon garlic powder for milder flavor)
  • 1 teaspoon balsamic vinegar (optional, for sweetness and tang)
  • Red pepper flakes (optional, for heat)
  • Fresh basil or parsley, chopped, for finishing
  • Nonstick spray or parchment liner made for air fryers (optional, for easier cleanup)

Instructions

  • Prep the tomatoes: Rinse and pat dry. For cherry or grape tomatoes, leave them whole or slice in half for extra caramelization. For small Roma or plum tomatoes, slice into halves or quarters lengthwise.
  • Season: In a bowl, toss tomatoes with olive oil, salt, pepper, Italian seasoning, and garlic. If using, add balsamic and a pinch of red pepper flakes. Coat evenly so every piece gets flavor.
  • Preheat the air fryer: Set to 375°F (190°C) for 3 minutes. Preheating helps the tomatoes start roasting right away.
  • Arrange in the basket: Lightly spray or line the basket. Spread the tomatoes in a single layer. A little overlap is fine, but avoid piling them too high or they’ll steam instead of roast.
  • Air fry: Cook at 375°F (190°C) for 10 to 14 minutes. Shake the basket or gently stir at the 6–7 minute mark. Cook until the skins blister and edges caramelize.
  • Check doneness: They’re ready when softened, lightly shriveled, and juicy with some browned spots. If you want deeper color, add 2–3 more minutes.
  • Finish and serve: Transfer to a bowl. Taste and adjust salt. Sprinkle with chopped fresh basil or parsley. Serve warm or at room temperature.
