Warm the beef (optional but recommended): If your roast beef is cold, loosely fold the slices and place them in a small piece of foil. Drizzle with a teaspoon of broth or water, seal, and air fry for 2–3 minutes. This keeps it tender.
Prep the bread: Spread mayo or butter on the outside of each slice or the cut sides of a roll.
This helps the bread crisp and brown.
Build the sandwich: On the non-buttered side, add cheese, warmed roast beef, and any onions or peppers. Sprinkle a pinch of salt, pepper, and garlic powder. Top with the second slice of cheese (optional for extra melt) and close the sandwich.
Basket setup: Place a small piece of parchment or a perforated liner in the basket to prevent sticking.
Lay the sandwich inside. If your air fryer tends to blow light items, secure the top with a toothpick.
Air fry: Cook at 370°F (188°C) for 4–6 minutes. Flip halfway and cook 3–4 more minutes, until the bread is golden and the cheese is melted.
Times vary by air fryer and bread thickness.
Add greens and sauce: Open the sandwich and add arugula or lettuce. Spread mustard or horseradish if you haven’t already. Close and let it rest for 1 minute.
Serve with au jus: Warm beef broth or au jus in the microwave or on the stove.
Serve on the side for dipping.
