Ingredients

  • Roast beef: 4–6 ounces thinly sliced (deli-style or leftover roast).
  • Bread: 2 slices sturdy sandwich bread, ciabatta, or a split hoagie roll.
  • Cheese: 1–2 slices provolone, Swiss, cheddar, or pepper jack.
  • Spread: 1–2 teaspoons mayonnaise, garlic mayo, or softened butter.
  • Mustard or horseradish: Dijon, whole grain, or creamy horseradish sauce for tang and heat.
  • Onions (optional): Caramelized or quick-sautéed for sweetness.
  • Peppers (optional): Roasted red peppers or pepperoncini for brightness.
  • Greens (optional): Arugula, baby spinach, or shredded lettuce for crunch after cooking.
  • Butter or oil: 1 teaspoon melted butter or olive oil to brush the bread.
  • Seasoning: Salt, black pepper, and a pinch of garlic powder.
  • Au jus (optional): Beef broth or store-bought au jus for dipping.

Instructions

  • Preheat the air fryer: Set to 370°F (188°C) for 3–4 minutes so it’s hot and ready.
  • Warm the beef (optional but recommended): If your roast beef is cold, loosely fold the slices and place them in a small piece of foil. Drizzle with a teaspoon of broth or water, seal, and air fry for 2–3 minutes. This keeps it tender.
  • Prep the bread: Spread mayo or butter on the outside of each slice or the cut sides of a roll. This helps the bread crisp and brown.
  • Build the sandwich: On the non-buttered side, add cheese, warmed roast beef, and any onions or peppers. Sprinkle a pinch of salt, pepper, and garlic powder. Top with the second slice of cheese (optional for extra melt) and close the sandwich.
  • Basket setup: Place a small piece of parchment or a perforated liner in the basket to prevent sticking. Lay the sandwich inside. If your air fryer tends to blow light items, secure the top with a toothpick.
  • Air fry: Cook at 370°F (188°C) for 4–6 minutes. Flip halfway and cook 3–4 more minutes, until the bread is golden and the cheese is melted. Times vary by air fryer and bread thickness.
  • Add greens and sauce: Open the sandwich and add arugula or lettuce. Spread mustard or horseradish if you haven’t already. Close and let it rest for 1 minute.
  • Serve with au jus: Warm beef broth or au jus in the microwave or on the stove. Serve on the side for dipping.
