Ingredients

  • 4 medium flour tortillas (8–10 inches)
  • 1/2 cup pizza sauce or marinara, plus extra for dipping
  • 1 1/2 cups shredded mozzarella cheese
  • 16–20 slices pepperoni (optional)
  • 1/4 cup finely diced bell peppers (any color)
  • 1/4 cup sliced black olives (optional)
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon Italian seasoning or dried oregano
  • 1/2 teaspoon garlic powder
  • Olive oil spray or 1 tablespoon olive oil
  • Pinch of red pepper flakes (optional)
  • Fresh basil or parsley, chopped, for garnish (optional)

Instructions

  • Preheat the air fryer: Set it to 375°F (190°C) for 3–5 minutes. A hot basket helps the tortillas crisp quickly.
  • Warm the tortillas (optional but helpful): Microwave the stack for 15–20 seconds under a damp paper towel. This makes them more flexible for rolling.
  • Spread the sauce: Lay a tortilla flat. Spread 2 tablespoons pizza sauce, leaving a 1/2-inch border around the edges to reduce leaks.
  • Add the cheese: Sprinkle 1/3–1/2 cup mozzarella evenly over the sauce. Add a little Parmesan for a savory boost.
  • Layer the toppings: Add pepperoni, peppers, and olives. Keep fillings light so the roll seals well and cooks evenly.
  • Season: Dust with Italian seasoning, garlic powder, and a pinch of red pepper flakes if you like heat.
  • Roll it tight: Starting at one edge, roll into a firm log. Press the seam side down. If needed, brush the edge with a touch of water or sauce to help it stick.
  • Secure the seam: Lightly brush or spray the outside with olive oil. Place seam-side down in the basket to hold the roll closed. Work in batches if needed.
  • Air fry: Cook at 375°F (190°C) for 6–8 minutes, flipping halfway. They’re done when golden and crisp with bubbling cheese at the ends.
  • Rest and slice: Let cool for 2 minutes so the cheese sets. Slice each roll into 3–4 pieces or serve as whole sticks.
  • Garnish and serve: Sprinkle fresh basil or parsley. Serve with extra warm marinara for dipping.
