Ingredients

  • Bread: Thick-cut sandwich bread Italian bread, sourdough, or Texas toast.
  • Butter or mayonnaise: For spreading on the outside to get that golden crunch.
  • Pizza sauce: Jarred or homemade. Marinara works in a pinch.
  • Mozzarella cheese: Low-moisture shredded or sliced.
  • Add provolone for extra melt.
  • Parmesan: Optional but adds a salty, nutty boost.
  • Pepperoni: Regular or turkey pepperoni. Mini slices fit well.
  • Optional add-ins: Cooked sausage sliced olives, bell peppers (thinly sliced), red onion, mushrooms (pre-cooked), fresh basil, red pepper flakes.
  • Seasonings: Dried oregano garlic powder, and a pinch of salt.
  • Nonstick spray or parchment: For the air fryer basket if needed.

Instructions

  • Prep the air fryer: Preheat to 370°F (188°C) for 3 minutes. Lightly spray the basket or use perforated parchment to prevent sticking.
  • Butter the bread: Spread a thin layer of butter or mayo on one side of each slice.
  • This is the outside. The fat helps with browning and flavor.
  • Sauce the inside: Flip the slices and spread a light layer of pizza sauce on the unbuttered sides. Don’t overdo it; too much sauce makes the sandwich soggy.
  • Layer the cheese: Add a generous layer of mozzarella to one slice. Sprinkle with a little Parmesan and a pinch of oregano and garlic powder.
  • Add toppings: Lay on pepperoni and any other thin, low-moisture toppings.
  • If using veggies or mushrooms, pre-cook or pat them dry so they don’t release moisture.
  • Close the sandwich: Top with the second slice, buttered side facing out. Press down gently to help everything stick together.
  • Air fry the first side: Place the sandwich in the air fryer basket. Cook at 370°F (188°C) for 4–5 minutes until the top is golden.
  • Flip and finish: Carefully flip with a spatula and cook another 3–4 minutes, until the second side is crisp and the cheese is melted.
  • If the bread browns too fast, lower to 350°F (177°C) and cook 1–2 extra minutes.
  • Rest and slice: Let the sandwich sit for 1 minute so the cheese sets slightly. Slice in halves or quarters. Garnish with fresh basil or red pepper flakes if you like.
