Prep the air fryer: Preheat to 370°F (188°C) for 3 minutes. Lightly spray the basket or use perforated parchment to prevent sticking.
Butter the bread: Spread a thin layer of butter or mayo on one side of each slice.
This is the outside. The fat helps with browning and flavor.
Sauce the inside: Flip the slices and spread a light layer of pizza sauce on the unbuttered sides. Don’t overdo it; too much sauce makes the sandwich soggy.
Layer the cheese: Add a generous layer of mozzarella to one slice. Sprinkle with a little Parmesan and a pinch of oregano and garlic powder.
Add toppings: Lay on pepperoni and any other thin, low-moisture toppings.
If using veggies or mushrooms, pre-cook or pat them dry so they don’t release moisture.
Close the sandwich: Top with the second slice, buttered side facing out. Press down gently to help everything stick together.
Air fry the first side: Place the sandwich in the air fryer basket. Cook at 370°F (188°C) for 4–5 minutes until the top is golden.
Flip and finish: Carefully flip with a spatula and cook another 3–4 minutes, until the second side is crisp and the cheese is melted.
If the bread browns too fast, lower to 350°F (177°C) and cook 1–2 extra minutes.
Rest and slice: Let the sandwich sit for 1 minute so the cheese sets slightly. Slice in halves or quarters. Garnish with fresh basil or red pepper flakes if you like.
