Air Fryer Pizza Quesadilla – Crispy, Cheesy, and Fast

Ingredients

  • 2 large flour tortillas 8–10 inches
  • 1/3 cup pizza sauce or marinara plus more for dipping
  • 1 –1 1/4 cups shredded mozzarella cheese
  • 8 –12 slices pepperoni optional
  • 2 tablespoons sliced black olives or bell peppers optional
  • 1 tablespoon finely chopped red onion optional
  • 1 tablespoon grated Parmesan optional but recommended
  • 1/2 teaspoon Italian seasoning or dried oregano
  • Pinch of red pepper flakes optional
  • Olive oil spray or a light brush of oil
  • Fresh basil for garnish optional

Instructions

  • Preheat the air fryer: Set it to 375°F (190°C) for 3–4 minutes. A warm basket helps the tortilla crisp faster.
  • Assemble on a board: Lay one tortilla flat.
  • Spread a thin layer of pizza sauce over it, leaving a 1/2-inch border to prevent leaking.
  • Add cheese: Sprinkle mozzarella evenly, going close to the edge but not over. Add Parmesan for extra flavor.
  • Add toppings: Place pepperoni, olives, peppers, or onion evenly so each bite gets a little of everything. Avoid overloading—too much filling can cause sogginess or spillage.
  • Season: Dust with Italian seasoning and a pinch of red pepper flakes if you like heat.
  • Top and seal: Place the second tortilla on top.
  • Gently press around the edges to help it stick to the melty cheese beneath.
  • Oil lightly: Spray or brush the top tortilla with a thin coat of olive oil. This is key for even browning.
  • Air fry—first side: Place the quesadilla oil-side up in the basket. Air fry at 375°F (190°C) for 3–4 minutes until lightly golden.
  • Flip carefully: Use a wide spatula to flip.
  • Lightly oil the now-top side. Air fry another 3–4 minutes until the outside is crisp and the cheese is fully melted.
  • Rest and slice: Let it sit for 1 minute to set the cheese. Slice into wedges.
  • Garnish with fresh basil if using. Serve with warm pizza sauce for dipping.
