Add cheese: Sprinkle mozzarella evenly, going close to the edge but not over. Add Parmesan for extra flavor.
Add toppings: Place pepperoni, olives, peppers, or onion evenly so each bite gets a little of everything. Avoid overloading—too much filling can cause sogginess or spillage.
Season: Dust with Italian seasoning and a pinch of red pepper flakes if you like heat.
Top and seal: Place the second tortilla on top.
Gently press around the edges to help it stick to the melty cheese beneath.
Oil lightly: Spray or brush the top tortilla with a thin coat of olive oil. This is key for even browning.
Air fry—first side: Place the quesadilla oil-side up in the basket. Air fry at 375°F (190°C) for 3–4 minutes until lightly golden.
Flip carefully: Use a wide spatula to flip.
Lightly oil the now-top side. Air fry another 3–4 minutes until the outside is crisp and the cheese is fully melted.
Rest and slice: Let it sit for 1 minute to set the cheese. Slice into wedges.
Garnish with fresh basil if using. Serve with warm pizza sauce for dipping.
