Ingredients

  • Pita bread: 6-inch pocket or pocketless; whole wheat or regular
  • Olive oil: For brushing the pita
  • Pizza sauce: Jarred or homemade marinara; pesto or white sauce work too
  • Mozzarella cheese: Shredded; use low-moisture for best melt
  • Parmesan: Grated, optional for extra flavor
  • Toppings (pick a few): Pepperoni, sliced mushrooms, bell peppers, red onion, olives, cherry tomatoes, spinach, cooked sausage, rotisserie chicken, or fresh basil
  • Seasoning: Dried oregano, red pepper flakes, salt, black pepper

Instructions

  • Preheat the air fryer. Set it to 375°F (190°C) for 3 minutes while you prep. A brief preheat helps the pita crisp evenly.
  • Prep the base. Brush both sides of the pita lightly with olive oil. This prevents dryness and boosts browning.
  • Par-crisp (optional but recommended). Air fry the plain oiled pita for 1–2 minutes to firm it up. This keeps the crust from getting soggy once you add sauce.
  • Add sauce. Spread 1–2 tablespoons of pizza sauce in a thin, even layer. Leave a small border so the edges can crisp.
  • Cheese time. Sprinkle a modest layer of mozzarella (about 1/3–1/2 cup). Add a pinch of Parmesan for extra savoriness.
  • Top thoughtfully. Add your chosen toppings in a single layer. Use pre-cooked meats and thinly sliced veggies so they heat through quickly.
  • Season. Finish with a light pinch of salt, black pepper, dried oregano, and red pepper flakes if you like heat.
  • Air fry. Cook at 375°F (190°C) for 4–6 minutes, until the cheese is melted and the edges are golden and crisp. Check at minute 4—air fryers vary.
  • Finish and serve. Let it rest 1 minute so the cheese settles. Add fresh basil or a drizzle of olive oil. Slice and enjoy.
