Preheat the air fryer: Set it to 375°F (190°C) for 3–4 minutes. A warm basket helps create a crisp shell.
Prep the tortilla: Lightly brush or spray one side of a tortilla with olive oil. Place it oiled-side down on a cutting board.
Add sauce: Spread 1–2 tablespoons of pizza sauce over half the tortilla.
Keep a small border so the filling doesn’t leak.
Layer the cheese: Sprinkle a generous layer of mozzarella over the sauced half. Add a teaspoon of Parmesan for flavor.
Add pepperoni and extras: Arrange pepperoni slices evenly. If using veggies, add thin slices so they cook through quickly.
Season: Dust the filling with a pinch of Italian seasoning or oregano.
Add red pepper flakes if you like heat.
Fold and seal: Fold the tortilla over to make a half-moon. Press the edge gently to help it stick.
Air fry the first side: Place the quesadilla in the basket. If it tries to open, secure it with a couple of toothpicks (remember to remove them before serving).
Cook for 3–4 minutes.
Flip and finish: Carefully flip with a spatula. Cook another 2–3 minutes, or until golden and crisp with melted cheese.
Rest and slice: Let it rest for 1 minute so the cheese settles. Slice into wedges.
Serve with warm pizza sauce or your favorite dip.
