Air Fryer Panko Crusted Tofu - Crispy, Light, and Flavorful

Ingredients

  • 14–16 oz extra-firm tofu, pressed
  • 1 cup panko breadcrumbs (gluten-free panko works too)
  • 2 tablespoons cornstarch (or arrowroot)
  • 1 tablespoon nutritional yeast (optional, for a savory boost)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (or sweet paprika)
  • 1/2 teaspoon kosher salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • 1 large egg, beaten, or 2–3 tablespoons aquafaba for vegan option
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon rice vinegar (or lemon juice)
  • 1 teaspoon toasted sesame oil (optional, for depth)
  • 1 tablespoon neutral oil (avocado, canola, or grapeseed), plus more for misting
  • Cooking spray or oil mister

Instructions

  • Press the tofu: Drain the tofu and wrap it in a clean kitchen towel. Place a heavy skillet on top and press for 10–15 minutes to remove excess moisture. This step makes the tofu crispier.
  • Cut into pieces: Slice the tofu into 1-inch cubes or 1/2-inch thick rectangles. Keep sizes consistent so everything cooks evenly.
  • Make the marinade: In a bowl, whisk soy sauce, rice vinegar, sesame oil, and 1 tablespoon neutral oil. Add the tofu and gently toss. Let it sit for 5–10 minutes while you prepare the coating.
  • Prepare the dredging station: In one shallow bowl, place the beaten egg (or aquafaba). In another, mix panko, cornstarch, nutritional yeast, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Coat the tofu: Working in batches, shake off excess marinade. Dip each piece in egg, then press into the panko mixture, coating all sides. Set on a plate.
  • Preheat the air fryer: Set it to 380°F (193°C) for 3 minutes. Lightly mist the basket with cooking spray to prevent sticking.
  • Arrange and mist: Place tofu in a single layer with a little space between pieces. Lightly mist the tops with cooking spray. Don’t overcrowd; cook in batches if needed.
  • Air fry: Cook at 380°F (193°C) for 10–12 minutes, flipping halfway. They’re done when the coating is deep golden and crisp.
  • Taste and finish: Sprinkle with a pinch of salt while hot. For extra zip, add a squeeze of lemon or a dusting of chili flakes.
  • Serve: Pair with your favorite dip—sweet chili sauce, spicy mayo, sriracha ketchup, or a garlicky yogurt sauce all work great.
