Preheat the air fryer: Set it to 350°F (175°C) for 2–3 minutes.
A quick preheat helps the chocolate soften and marshmallows toast evenly.
Prep the crusts: Place mini graham crusts on a small sheet of parchment or in the fryer basket. If you like, lightly brush crust edges with melted butter.
Add the chocolate: Break chocolate bars into pieces and fill each crust with a single even layer. If using chips, add a generous handful.
You want the base covered but not piled high.
Soften the chocolate: Air fry for 1–2 minutes, just until the chocolate looks glossy and slightly melty. Don’t overdo it.
Add the marshmallows: Place 3–4 regular marshmallows (or a layer of minis) on top of the softened chocolate. Leave a little space so air can circulate and toast the tops.
Toast: Air fry for 2–4 minutes at 350°F, watching closely around the 2-minute mark.
Pull them when the marshmallows are puffy and golden to deep brown.
Finish with a pinch of salt: A tiny sprinkle of flaky sea salt over the warm tops makes the chocolate pop. Optional but highly recommended.
Cool slightly and serve: Let the pies sit for 2–3 minutes. The chocolate sets a bit and the marshmallows become perfectly gooey.
