Air Fryer Low Carb Bagel Bites - Easy, Crispy, and Satisfying

Ingredients

  • Almond flour (finely ground) – the base of the dough
  • Shredded mozzarella cheese – for structure and chew
  • Cream cheese – to help bind and add tenderness
  • Large egg – for moisture and lift
  • Baking powder – to help them puff
  • Salt – just a pinch
  • Everything Bagel seasoning – or sesame seeds, poppy seeds, garlic, and onion flakes
  • Olive oil spray – to help crisp and prevent sticking
  • Optional toppings: shredded cheddar, minced chives, crumbled bacon, or a pinch of garlic powder

Instructions

  • Preheat the air fryer. Set it to 350°F (175°C). Let it heat while you prep the dough so you get an even cook and a quick rise.
  • Melt the cheeses. In a microwave-safe bowl, combine shredded mozzarella and cream cheese. Microwave in 20–30 second bursts, stirring in between, until the mixture is smooth and stretchy. Don’t overheat; you want it melted, not oily.
  • Mix the dry ingredients. In a separate bowl, whisk almond flour, baking powder, and a pinch of salt. Break up any clumps so the dough stays even.
  • Bring the dough together. Add the dry mix and the egg to the melted cheese. Stir with a spatula at first, then switch to clean hands to knead until the dough becomes cohesive. If it’s sticky, lightly oil your hands. If it feels too soft, add 1–2 extra teaspoons of almond flour.
  • Shape the bites. Divide the dough into 16 equal pieces. Roll each one into a smooth ball about 1 inch wide. For a classic bagel look, poke a small hole in the center of each ball and gently stretch it, or leave them as nuggets for easier shaping.
  • Top them. Lightly spritz the tops with olive oil spray. Sprinkle generously with Everything Bagel seasoning. Press the seasoning in so it sticks.
  • Air fry in batches. Place the bites in the basket with space between each. Air fry for 7–9 minutes, turning once halfway through. They’re done when the tops are golden and the centers feel set but still soft.
  • Rest and serve. Let them cool for 2–3 minutes to finish setting. Serve warm with cream cheese, whipped ricotta, or a swipe of butter.
