Preheat the air fryer: Set to 375°F (190°C) and warm for 3 minutes. A hot basket gives you a crisp base.
Prep the tortilla: Lightly mist the basket or use a perforated parchment liner.
Brush the tortilla with a thin layer of olive oil if you want extra crunch.
Par-crisp the base: Air fry the plain tortilla for 2–3 minutes until it just starts to firm up. This prevents sogginess.
Add sauce: Spread pizza sauce in a thin, even layer, leaving a small border. Too much sauce will soften the crust.
Cheese and toppings: Sprinkle mozzarella evenly, then add pepperoni or chosen toppings.
Finish with Parmesan, a pinch of red pepper flakes, and a light dusting of Italian seasoning.
Air fry: Return to the basket and cook 3–5 minutes at 375°F, until the cheese is melted and bubbling and the edges are golden. Check at 3 minutes to avoid over-browning.
Season and serve: Let it rest 1 minute so the cheese sets. Add fresh basil, salt, and pepper to taste.
Slice and enjoy.
