Ingredients

  • 1 low-carb tortilla (8–10 inches; almond flour or high-fiber wheat works well)
  • 2–3 tablespoons no-sugar-added pizza sauce or marinara
  • 3/4 to 1 cup shredded mozzarella (low-moisture, part-skim)
  • 8–10 slices pepperoni or your preferred keto-friendly toppings
  • 1 tablespoon grated Parmesan (optional)
  • 1 teaspoon olive oil (optional, for extra crisp)
  • Pinch of red pepper flakes (optional)
  • Fresh basil or Italian seasoning, to taste
  • Salt and black pepper, to taste
  • Cooking spray or a small square of parchment (air-fryer safe)

Instructions

  • Preheat the air fryer: Set to 375°F (190°C) and warm for 3 minutes. A hot basket gives you a crisp base.
  • Prep the tortilla: Lightly mist the basket or use a perforated parchment liner. Brush the tortilla with a thin layer of olive oil if you want extra crunch.
  • Par-crisp the base: Air fry the plain tortilla for 2–3 minutes until it just starts to firm up. This prevents sogginess.
  • Add sauce: Spread pizza sauce in a thin, even layer, leaving a small border. Too much sauce will soften the crust.
  • Cheese and toppings: Sprinkle mozzarella evenly, then add pepperoni or chosen toppings. Finish with Parmesan, a pinch of red pepper flakes, and a light dusting of Italian seasoning.
  • Air fry: Return to the basket and cook 3–5 minutes at 375°F, until the cheese is melted and bubbling and the edges are golden. Check at 3 minutes to avoid over-browning.
  • Season and serve: Let it rest 1 minute so the cheese sets. Add fresh basil, salt, and pepper to taste. Slice and enjoy.
