Ingredients

  • 1 large rutabaga (about 1.5–2 pounds), peeled and cut into fry shapes
  • 2 tablespoons avocado oil (or olive oil)
  • 2 tablespoons finely grated Parmesan cheese (optional for extra crisp)
  • 1 tablespoon almond flour (or coconut flour, 2 teaspoons)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (or regular paprika)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt (plus more to finish)
  • 1/4 teaspoon black pepper
  • Optional: pinch of cayenne or chili powder for heat
  • Optional dips: sugar-free ketchup, garlicky mayo, or ranch

Instructions

  • Prep the rutabaga. Peel the rutabaga and cut it into fry-shaped sticks about 1/3 inch thick. Keep them similar in size so they cook evenly.
  • Soak briefly (optional but helpful). For better texture, soak the sticks in cold water for 10–15 minutes. This helps remove excess starch that can keep them from crisping. Drain and pat very dry with paper towels.
  • Preheat the air fryer. Set your air fryer to 400°F (200°C) and let it run for 3–5 minutes so the basket is hot.
  • Season and coat. In a large bowl, toss the rutabaga with avocado oil. Add almond flour, Parmesan, garlic powder, smoked paprika, onion powder, salt, pepper, and optional cayenne. Toss until every piece is lightly and evenly coated.
  • Arrange in a single layer. Place the fries in the air fryer basket in one even layer with a little space between pieces. Work in batches if needed for best crispiness.
  • Air fry. Cook for 12–15 minutes, shaking the basket halfway. Check at 10 minutes and continue until the edges are deep golden and crisp, and the centers are tender.
  • Season to finish. Transfer to a plate and sprinkle with a pinch of sea salt while hot. Repeat with remaining batches.
  • Serve. Enjoy right away with your favorite low-carb dip.
