Chill the curds: Pop the cheese curds in the freezer for 20–30 minutes. Slightly firm curds are easier to coat and less likely to burst in the air fryer.
Prep the bowls: In one shallow bowl, mix almond flour with garlic powder, onion powder, paprika, salt, and pepper. In a second bowl, whisk eggs with a splash of heavy cream.
In a third bowl, combine finely crushed pork rinds with grated Parmesan.
Preheat the air fryer: Set to 375°F (190°C) for 3–5 minutes. A preheated basket delivers a crispier crust.
Coat the curds: Working in small batches, roll the chilled curds in the almond flour, dip into the egg mixture, then press into the pork rind–Parmesan blend. For extra crunch, double coat by repeating the egg and pork rind steps.
Arrange and spray: Place coated curds in a single layer in the air fryer basket.
Don’t crowd them. Lightly spray with avocado oil for even browning.
Air fry: Cook for 5–7 minutes, flipping halfway and spraying again. They’re done when golden and just starting to ooze. Pull them as soon as you see slight melting to keep the cheese inside.
Serve immediately: Let them sit for 1 minute to set, then serve hot with your favorite keto-friendly dip.
