Ingredients

  • Boneless pork chops: 4 chops, about 1-inch thick, 6–8 ounces each.
  • Olive oil or avocado oil: 1–2 tablespoons, for moisture and browning.
  • Kosher salt: 1–1½ teaspoons (adjust to taste).
  • Black pepper: 1 teaspoon, freshly ground.
  • Garlic powder: 1 teaspoon.
  • Onion powder: 1 teaspoon.
  • Paprika: 1 teaspoon (use smoked for a deeper flavor).
  • Dried thyme or oregano: 1 teaspoon.
  • Cayenne pepper: 1/8–1/4 teaspoon (optional, for heat).
  • Butter: 1 tablespoon, melted (optional, brushed on after cooking for extra richness).
  • Lemon wedges: For serving.

Instructions

  • Bring chops to room temp: Take the pork chops out of the fridge 15–20 minutes before cooking. This helps them cook evenly and stay juicy.
  • Preheat the air fryer: Set to 400°F (200°C) for 5 minutes. A preheated basket gives better browning.
  • Mix the seasoning: In a small bowl, combine salt, pepper, garlic powder, onion powder, paprika, dried thyme or oregano, and cayenne if using.
  • Prep the chops: Pat the pork chops dry with paper towels. Rub both sides with oil, then coat generously with the spice mix, pressing it into the surface.
  • Arrange in the basket: Place the chops in a single layer in the air fryer basket. Do not overlap. Work in batches if needed.
  • Cook: Air fry at 400°F (200°C) for 8–10 minutes total, flipping halfway. Start checking at 7 minutes if your chops are thinner.
  • Check doneness: Use an instant-read thermometer. Pull at 140°F (60°C); the temp will rise to 145°F (63°C) while resting.
  • Rest and finish: Let rest 5 minutes. Brush with melted butter if you like, and squeeze a little lemon over the top.
  • Serve: Pair with low-carb sides like roasted broccoli, cauliflower mash, or a crisp salad.
