Prep the crab: Gently separate the imitation crab sticks into strips or bite-size chunks.
Pat them dry with a paper towel to remove excess moisture. This helps them get crisp.
Make the seasoning oil: In a bowl, whisk together the oil, soy sauce, and lemon juice. Stir in garlic powder, paprika, onion powder, black pepper, and red pepper flakes if using.
Toss to coat: Add the crab to the bowl and toss until evenly coated.
Sprinkle in sesame seeds if you like a little nutty crunch.
Preheat the air fryer: Set your air fryer to 375°F (190°C) and let it heat for 3 minutes. Preheating helps the edges crisp evenly.
Arrange in the basket: Place the crab in a single layer in the basket. A little overlap is fine, but avoid piling it too high or it won’t crisp as well.
Work in batches if needed.
Air fry: Cook for 8–10 minutes, shaking the basket or tossing with tongs halfway through. You’re looking for light golden edges and a slight chew in the center.
Taste and finish: Check for seasoning. Add a pinch of salt or an extra squeeze of lemon if needed.
Garnish with chopped green onion or parsley.
Serve warm: Pair with spicy mayo or sweet chili sauce, or scatter over a simple green salad for a quick meal.
