Ingredients

  • 12 ounces imitation crab sticks surimi, pulled into bite-size pieces
  • 1 tablespoon olive oil or neutral oil
  • 1 teaspoon soy sauce or tamari for gluten-free
  • 1 teaspoon lemon juice or rice vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika or regular paprika
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes optional, for heat
  • 1 –2 teaspoons sesame seeds optional
  • Chopped green onion or parsley for garnish optional
  • Dipping sauces optional: spicy mayo, sweet chili sauce, tartar sauce, or lemon wedges

Instructions

  • Prep the crab: Gently separate the imitation crab sticks into strips or bite-size chunks.
  • Pat them dry with a paper towel to remove excess moisture. This helps them get crisp.
  • Make the seasoning oil: In a bowl, whisk together the oil, soy sauce, and lemon juice. Stir in garlic powder, paprika, onion powder, black pepper, and red pepper flakes if using.
  • Toss to coat: Add the crab to the bowl and toss until evenly coated.
  • Sprinkle in sesame seeds if you like a little nutty crunch.
  • Preheat the air fryer: Set your air fryer to 375°F (190°C) and let it heat for 3 minutes. Preheating helps the edges crisp evenly.
  • Arrange in the basket: Place the crab in a single layer in the basket. A little overlap is fine, but avoid piling it too high or it won’t crisp as well.
  • Work in batches if needed.
  • Air fry: Cook for 8–10 minutes, shaking the basket or tossing with tongs halfway through. You’re looking for light golden edges and a slight chew in the center.
  • Taste and finish: Check for seasoning. Add a pinch of salt or an extra squeeze of lemon if needed.
  • Garnish with chopped green onion or parsley.
  • Serve warm: Pair with spicy mayo or sweet chili sauce, or scatter over a simple green salad for a quick meal.
