Prep the basket: Lightly spray your air fryer basket or line it with perforated air fryer parchment to prevent sticking. Preheat to 370°F (190°C) for 2–3 minutes if your model benefits from preheating.
Cut the hearts: Gently press the heart-shaped cutter into the graham crackers to make pairs of similar-sized hearts. Use a gentle rocking motion to prevent cracking.
Save the scraps for snacking or crumbs.
Build the base: Place half of the graham hearts into the basket. Add a square or two of chocolate on each. Don’t crowd—leave a little space so air can circulate.
Add the marshmallow: Top each chocolate layer with one large marshmallow (or a tablespoon of marshmallow fluff).
If using whole marshmallows, you can cut them in half crosswise so they melt more evenly.
Air fry until melty: Cook for 2–3 minutes at 370°F (190°C), just until the marshmallow puffs and turns light golden and the chocolate softens. Keep an eye on them—marshmallows go from perfect to overdone fast.
Finish with the top: Carefully remove the basket. Place a second graham heart on top of each s’more and press gently to sandwich the filling.
If you like a slightly softer top, brush the top hearts lightly with melted butter before adding.
Optional extra toast: Return the assembled s’mores to the air fryer for 30–45 seconds to warm the top. This helps the chocolate fully melt and the sandwich hold together.
Garnish: While still warm, add a tiny pinch of sea salt or a sprinkle of crushed strawberries. Drizzle with melted chocolate for a bakery-style finish.
Cool briefly and serve: Let the s’mores sit for 1–2 minutes to firm slightly, then serve warm and gooey.
