Preheat the air fryer: Set to 380°F (193°C). Let it heat while you mix the meatballs.
Prep a mixing bowl: In a large bowl, whisk the egg with milk.
Stir in breadcrumbs, Parmesan, parsley, garlic, onion, Italian seasoning, smoked paprika, salt, and pepper. This step hydrates the breadcrumbs and builds flavor.
Add the turkey: Gently fold the ground turkey into the breadcrumb mixture. Mix just until combined. Do not overmix or the meatballs can turn dense.
Form the meatballs: Lightly oil your hands.
Scoop about 1 1/2 tablespoons per meatball (a small cookie scoop works well). Roll into balls about 1 to 1 1/4 inches wide. You should get 18–20 meatballs.
Spray the basket: Lightly coat the air fryer basket with olive oil spray to reduce sticking.
Arrange and cook: Place meatballs in a single layer with space between them.
Air fry for 10–12 minutes, shaking the basket or turning once halfway. They’re done when the centers reach 165°F (74°C) on an instant-read thermometer.
Rest and serve: Let meatballs rest for 3 minutes to retain juices. Serve with warm marinara, pesto, tzatziki, or a light yogurt-garlic sauce.
