Preheat the air fryer: Set it to 375°F (190°C) for 3–4 minutes. A hot basket helps the wraps crisp up quickly.
Assemble the wrap: Lay a tortilla on your work surface. Spread a thin layer of mustard or mayo over the center, leaving a 1-inch border all around.
Layer the ham and cheese: Add 2–3 slices of ham and a generous layer of cheese.
Keep the filling in a line across the middle so it’s easier to roll.
Add extras (optional): A few spinach leaves, a slice or two of tomato (blotted dry), a sprinkle of black pepper, or a dash of smoked paprika.
Roll it tight: Fold the sides in slightly, then roll from the bottom up into a tight cylinder. Tuck as you roll to prevent gaps.
Brush or spray: Lightly brush the outside with melted butter or spray with oil. This gives a golden, crisp finish.
Air fry seam-side down: Place the wrap in the basket, leaving space between wraps.
Cook for 6–8 minutes, turning once halfway, until golden and the cheese is melted.
Check doneness: The tortilla should be crisp and lightly blistered. If needed, cook 1–2 minutes more.
Rest and slice: Let the wrap sit for 1–2 minutes so the cheese settles. Slice in halves or thirds and serve warm.
