Preheat the air fryer to 380°F (193°C). If your model doesn’t preheat automatically, run it empty for 3–4 minutes.
Prep the peppers. Slice off the tops, remove seeds and membranes, and cut into 1/2-inch strips. Thicker strips stay crisp-tender; thinner ones get softer and more charred.
Toss with oil and seasonings. In a bowl, combine peppers with olive oil, salt, pepper, garlic powder, and paprika.
Coat evenly so the peppers brown well.
Arrange in the basket. Spread peppers in a loose, even layer. Don’t pack them tight; a little space helps them crisp. Cook in batches if needed.
Air fry for 8–12 minutes. Shake the basket halfway through. Start checking at 8 minutes.
They’re done when edges are browned and the peppers are tender but not limp.
Finish with acidity. Transfer to a bowl and add a small squeeze of lemon juice or a splash of red wine vinegar. Taste and adjust salt.
Optional garnish. Add fresh herbs, a pinch of red pepper flakes, or a sprinkle of Parmesan while hot.
