Ingredients

  • 3–4 medium green bell peppers (about 1.5 pounds), seeded and sliced
  • 1–1.5 tablespoons olive oil (or avocado oil)
  • 3/4 teaspoon kosher salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional but tasty)
  • 1/2 teaspoon smoked paprika or paprika (optional, for warmth and color)
  • Fresh lemon juice or red wine vinegar (a squeeze at the end brightens the flavor)
  • Optional add-ins: sliced onion, cherry tomatoes, crushed red pepper flakes, grated Parmesan, or fresh herbs like parsley or basil

Instructions

  • Preheat the air fryer to 380°F (193°C). If your model doesn’t preheat automatically, run it empty for 3–4 minutes.
  • Prep the peppers. Slice off the tops, remove seeds and membranes, and cut into 1/2-inch strips. Thicker strips stay crisp-tender; thinner ones get softer and more charred.
  • Toss with oil and seasonings. In a bowl, combine peppers with olive oil, salt, pepper, garlic powder, and paprika. Coat evenly so the peppers brown well.
  • Arrange in the basket. Spread peppers in a loose, even layer. Don’t pack them tight; a little space helps them crisp. Cook in batches if needed.
  • Air fry for 8–12 minutes. Shake the basket halfway through. Start checking at 8 minutes. They’re done when edges are browned and the peppers are tender but not limp.
  • Finish with acidity. Transfer to a bowl and add a small squeeze of lemon juice or a splash of red wine vinegar. Taste and adjust salt.
  • Optional garnish. Add fresh herbs, a pinch of red pepper flakes, or a sprinkle of Parmesan while hot.
