Prep the onions: Peel onions and slice into 1/2-inch thick rings. Gently separate the rings.
Pat dry with paper towels so the coating sticks.
Set up three bowls: In bowl one, whisk together gluten free flour, cornstarch, paprika, garlic powder, onion powder, 1 teaspoon salt, and 1/2 teaspoon pepper. In bowl two, whisk eggs with milk. In bowl three, add gluten free panko with a pinch of salt and pepper.
Preheat the air fryer: Set to 385°F (195°C) for 4 minutes.
A hot basket helps the coating crisp immediately.
Coat the rings: Working a few at a time, dip rings in seasoned flour (shake off excess), then egg mixture (let drip), then press into panko until well coated. Place on a tray as you go.
Spray lightly with oil: Mist both sides of the coated rings with oil spray. This is key for even browning in the air fryer.
Air fry the first batch: Arrange rings in a single layer in the air fryer basket without overlapping.
Cook 8–10 minutes, flipping halfway and spraying the second side. They’re done when golden and crisp.
Repeat: Continue with remaining rings. Keep cooked ones on a wire rack so the bottoms stay crisp.
Taste and season: Sprinkle with a little extra salt right after cooking, if needed.
