Prep the apples: Peel and core the apples.
Dice half into small 1/4-inch pieces and grate the other half on the large holes of a box grater. This combo gives both juicy pockets and even apple flavor.
Preheat the air fryer: Set to 370°F (188°C) for 5 minutes. A hot basket helps the fritters set and crisp.
Mix the dry ingredients: In a large bowl, whisk the gluten free flour, cornstarch, baking powder, cinnamon, nutmeg, salt, and sugar until well combined.
Combine wet ingredients: In a separate bowl, whisk the eggs, milk, vanilla, and melted butter until smooth.
Make the batter: Pour the wet mixture into the dry.
Stir until just combined. Fold in the diced and grated apples. The batter should be thick and scoopable, not runny.
If too thick, add 1–2 teaspoons milk. If too loose, add 1–2 teaspoons flour.
Prep the basket: Lightly spray the preheated air fryer basket with oil. Do not use parchment unless your air fryer allows it and it’s fully weighed down with batter.
Portion the fritters: Using two spoons or a 2-tablespoon scoop, drop mounds of batter into the basket, flattening slightly with the back of a spoon.
Leave space between fritters. Work in batches to avoid crowding.
Oil the tops: Lightly mist the fritters with oil spray. This helps browning and prevents a dusty finish.
Air fry: Cook at 370°F (188°C) for 6–7 minutes.
Flip, spray again, and cook 4–6 minutes more until deep golden brown and set in the center. Internal temp should reach about 200°F (93°C) for doneness.
Glaze (optional): Whisk powdered sugar, milk, and vanilla until smooth. Drizzle over warm fritters or dip the tops.
Let set 2–3 minutes.
Serve: Enjoy warm. Dust with powdered sugar if not glazing.
