Ingredients

  • Marshmallows: Mini marshmallows work best. Standard or jumbo marshmallows also work if sliced.
  • Air fryer: Preferably with a lower temperature setting (150–200°F / 65–95°C).
  • Parchment or a mesh liner: Helps prevent sticking and keeps small pieces from flying.
  • Optional flavors: Cinnamon sugar, cocoa powder, freeze-dried fruit dust, or a pinch of sea salt.
  • Storage: An airtight jar or zip-top bag with a small desiccant packet, if available.

Instructions

  • Prep the basket: Line the air fryer basket with parchment or a perforated liner. This keeps minis from falling through and makes cleanup easy.
  • Arrange the marshmallows: Spread them in a single layer with slight gaps. Crowding traps steam and slows drying.
  • Set the temperature: Aim for 160–180°F (70–80°C) if your air fryer allows. If the lowest setting is 200°F (95°C), use that—but keep a close eye.
  • Turn off fan boost (if possible): A gentler fan prevents pieces from flying and reduces uneven spots. If yours doesn’t have this option, use a mesh rack over the marshmallows to hold them down.
  • Start the first cycle: Air fry for 30–45 minutes at low heat. Shake the basket or gently stir every 10 minutes for even drying.
  • Check texture: When ready, they’ll feel dry, very light, and crisp. If they’re still chewy or sticky, continue in 10-minute increments.
  • Cool completely: Spread them on a sheet pan for 10–15 minutes. They crisp more as they cool. Don’t store while warm—trapped heat creates moisture.
  • Optional flavor coating: While still slightly warm, toss with a small amount of cinnamon sugar or cocoa powder. Use a very light dusting to avoid clumping.
  • Store airtight: Transfer to a sealed jar or bag. Add a desiccant packet if you have one to keep them crisp.
