Clean the gizzards: Rinse under cold water.
Trim any excess silver skin or connective tissue. Cut large pieces in half for even cooking.
Optional tenderizing step: Marinate the gizzards in buttermilk for 30 minutes to 4 hours in the fridge. Drain and pat dry before seasoning.
This helps soften and mellow the flavor.
Par-cook on the stovetop: Place gizzards in a pot and cover with water by 1–2 inches. Add a pinch of salt. Bring to a gentle simmer and cook for 25–35 minutes, until fork-tender but not falling apart.
Drain well and pat dry. Dry gizzards crisp better.
Season generously: In a bowl, combine salt, pepper, garlic powder, onion powder, smoked paprika, and cayenne. Add soy sauce or Worcestershire, hot sauce if using, and oil.
Toss the gizzards to coat evenly.
Optional light crust: For extra crunch, sprinkle cornstarch or flour over the seasoned gizzards and toss to form a thin, even coating. Shake off excess. Lightly mist with oil if your air fryer tends to stick.
Preheat the air fryer: Set to 400°F (200°C) for 3–5 minutes.
A hot basket gives better browning.
Air fry in batches: Arrange gizzards in a single layer without crowding. Cook at 400°F (200°C) for 8–12 minutes, shaking the basket or flipping halfway. They should be crispy at the edges and sizzling.
Thicker pieces may need a couple more minutes.
Taste and finish: Sprinkle with a pinch of salt while hot. Squeeze over fresh lemon for brightness. Garnish with herbs if you like.
