Prep the air fryer: Preheat your air fryer to 350°F (175°C) for 3–5 minutes. Lightly spray the basket or use a parchment liner rated for air fryers.
Prep the puff pastry: Unfold the thawed puff pastry on a lightly floured surface.
Use a rolling pin to smooth it into an even rectangle, about 1/8 inch thick. Cut into 16 equal squares.
Cut the brie: Slice the brie into 16 bite-size cubes. The rind is edible, so you can leave it on if you like.
If it’s very soft, chill it briefly to make cutting easier.
Assemble: Place a cube of brie in the center of each puff pastry square. Top with 1/2 teaspoon of cherry jam. If using, add a few chopped nuts and a tiny pinch of herbs.
Seal the bites: Bring the corners of the puff pastry up and over the filling and pinch to seal.
You can leave a small vent at the top or fully enclose them for a round bite. Brush lightly with the egg wash.
Air fry in batches: Arrange bites in a single layer, with space between them. Air fry for 7–10 minutes, until the pastry is puffed and evenly golden.
Rotate the basket halfway if your air fryer has hot spots.
Finish: While still hot, drizzle with a touch of honey and sprinkle with flaky salt if you like. Add a few extra herb leaves for color.
Serve: Let them cool for 3–4 minutes so the cheese sets slightly. Serve warm.
