Prep the salmon: Pat the fillets dry with paper towels. This helps the glaze stick and encourages caramelization.
Mix the glaze: In a small bowl, stir together brown sugar, soy sauce, olive oil, Dijon, garlic powder, smoked paprika, black pepper, salt, and lemon zest until smooth.
Coat evenly: Brush or spoon the glaze all over the salmon, top and sides. If the skin is on, you don’t need to coat the skin side.
Preheat the air fryer: Set it to 400°F (200°C) for 3 minutes.
A hot basket helps get that caramelized finish.
Prepare the basket: Lightly grease the basket or line it with perforated parchment made for air fryers. Avoid solid foil that blocks airflow.
Arrange fillets: Place salmon in a single layer, glaze side up. Leave a little space between pieces so the air can circulate.
Air fry: Cook for 7–10 minutes, depending on thickness.
Start checking at 7 minutes. The top should look glossy and lightly caramelized.
Check doneness: For medium, aim for an internal temperature of 125–130°F in the thickest part, or cook to 145°F if you prefer fully cooked. The flesh should flake easily with a fork.
Rest briefly: Let the salmon sit for 2 minutes.
The carryover heat finishes the job and keeps it juicy.
Serve: Squeeze fresh lemon over the top, sprinkle with parsley or green onions, and plate with your favorite sides.
