Prep the broccoli: If using fresh broccoli, steam or microwave until just tender but not mushy (about 2–3 minutes). Pat dry very well with paper towels.
Chop finely so the pieces bind easily.
Mix the base: In a large bowl, add the chopped broccoli, cheddar, Parmesan, breadcrumbs, green onion, garlic, onion powder, salt, pepper, and smoked paprika. Stir to combine.
Add eggs and bind: Beat the eggs in a small bowl, then pour over the mixture. Stir until everything is evenly moistened and holds together when pressed.
If too crumbly, add a tablespoon more beaten egg or a splash of milk. If too wet, add a couple tablespoons of breadcrumbs.
Shape the bites: Scoop about 1 heaping tablespoon of mixture and roll into a ball or shape into a small nugget. Aim for uniform size so they cook evenly.
You should get about 20–24 bites.
Preheat the air fryer: Set to 375°F (190°C) for 3 minutes. Lightly spray the basket with oil.
Load the basket: Arrange the bites in a single layer with a little space between each. Lightly spray the tops with oil for extra crunch.
Air fry: Cook for 8–10 minutes, flipping halfway, until golden brown and crisp.
The cheese should be melty and the centers set.
Batch and serve: Repeat with remaining bites if needed. Serve hot with your favorite dipping sauce.
