Air Fryer Broccoli Cheese Bites - Crispy, Cheesy, and So Easy

Ingredients

  • 2 cups finely chopped broccoli florets (fresh or thawed frozen)
  • 1 cup shredded sharp cheddar cheese (or a blend like cheddar–mozzarella)
  • 1/3 cup grated Parmesan
  • 1 cup breadcrumbs (plain or panko; gluten-free if needed)
  • 2 large eggs
  • 1/4 cup finely chopped green onion (optional but tasty)
  • 1 clove garlic, minced (or 1/2 teaspoon garlic powder)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional for a subtle smoky note)
  • Olive oil spray (or your preferred cooking spray)
  • Favorite dip (ranch, marinara, honey mustard, or spicy aioli), optional

Instructions

  • Prep the broccoli: If using fresh broccoli, steam or microwave until just tender but not mushy (about 2–3 minutes). Pat dry very well with paper towels. Chop finely so the pieces bind easily.
  • Mix the base: In a large bowl, add the chopped broccoli, cheddar, Parmesan, breadcrumbs, green onion, garlic, onion powder, salt, pepper, and smoked paprika. Stir to combine.
  • Add eggs and bind: Beat the eggs in a small bowl, then pour over the mixture. Stir until everything is evenly moistened and holds together when pressed. If too crumbly, add a tablespoon more beaten egg or a splash of milk. If too wet, add a couple tablespoons of breadcrumbs.
  • Shape the bites: Scoop about 1 heaping tablespoon of mixture and roll into a ball or shape into a small nugget. Aim for uniform size so they cook evenly. You should get about 20–24 bites.
  • Preheat the air fryer: Set to 375°F (190°C) for 3 minutes. Lightly spray the basket with oil.
  • Load the basket: Arrange the bites in a single layer with a little space between each. Lightly spray the tops with oil for extra crunch.
  • Air fry: Cook for 8–10 minutes, flipping halfway, until golden brown and crisp. The cheese should be melty and the centers set.
  • Batch and serve: Repeat with remaining bites if needed. Serve hot with your favorite dipping sauce.
