Prep the coating: In a shallow bowl, combine the oats or crushed cornflakes with cinnamon and a pinch of salt. Stir to mix. If you like extra crunch, add a few chopped peanuts.
Slice the bananas: Peel and cut into 1/2-inch coins.
Aim for even slices so they cook at the same rate.
Make mini sandwiches: Spread a small dab of peanut butter on one banana slice, top with another slice to make a bite. Don’t overfill. A thin layer holds better and won’t ooze out.
Lightly sweeten (optional): If using honey or maple syrup, brush a tiny amount on the outside of each bite.
This helps the coating stick and adds a gentle glaze.
Coat the bites: Roll each banana sandwich in the oat or cornflake mixture, pressing gently so it adheres. Shake off any loose bits.
Preheat the air fryer: 375°F (190°C) for 3 minutes. Meanwhile, lightly grease the air fryer basket with cooking spray or oil to prevent sticking.
Arrange and cook: Place the coated bites in a single layer, not touching.
Air fry for 5–7 minutes, flipping halfway. They’re ready when the coating is golden and the peanut butter is soft.
Finish and serve: Let them cool for 1–2 minutes to set. Drizzle with melted dark chocolate, sprinkle coconut or flaky salt if you like, and serve warm.
