Ingredients

  • Frozen French fries (crinkle-cut or shoestring work best)
  • Thick-cut bacon (or pre-cooked bacon for speed)
  • Shredded cheddar cheese (or a cheddar–Monterey Jack blend)
  • Garlic powder
  • Onion powder
  • Paprika (smoked or sweet)
  • Salt and black pepper
  • Olive oil (or avocado oil)
  • Green onions (sliced, for garnish)
  • Ranch dressing or sour cream (optional, for dipping)
  • Jalapeño slices (optional, for heat)

Instructions

  • Preheat the air fryer. Set it to 400°F (200°C) for 3–5 minutes. A hot basket helps the fries crisp up fast.
  • Cook the bacon. Air-fry raw bacon at 360°F (182°C) for 7–9 minutes, flipping halfway, until crisp. Drain on paper towels and chop. If using pre-cooked bacon, warm it for 1–2 minutes to re-crisp.
  • Season the fries. Toss frozen fries with 1 tablespoon oil, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon paprika, and a pinch of salt and pepper. Coat evenly.
  • Air-fry the fries. Spread fries in a single layer in the basket. Cook 10–14 minutes, shaking halfway, until golden and crisp. Thicker fries may need a couple more minutes.
  • Add the cheese. Once fries are crisp, sprinkle 1 to 1 1/2 cups shredded cheese evenly over the top. Air-fry for 1–2 minutes, just until melted. Don’t overcook or the cheese can turn oily.
  • Top with bacon and garnish. Scatter chopped bacon and sliced green onions over the cheesy fries. Add jalapeños if you want heat.
  • Serve hot with dips. Plate immediately and serve with ranch or sour cream on the side. Eat while that cheese is perfectly gooey.
