Preheat the air fryer. Set it to 400°F (200°C) for 3–5 minutes.
A hot basket helps the fries crisp up fast.
Cook the bacon. Air-fry raw bacon at 360°F (182°C) for 7–9 minutes, flipping halfway, until crisp. Drain on paper towels and chop. If using pre-cooked bacon, warm it for 1–2 minutes to re-crisp.
Season the fries. Toss frozen fries with 1 tablespoon oil, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon paprika, and a pinch of salt and pepper.
Coat evenly.
Air-fry the fries. Spread fries in a single layer in the basket. Cook 10–14 minutes, shaking halfway, until golden and crisp. Thicker fries may need a couple more minutes.
Add the cheese. Once fries are crisp, sprinkle 1 to 1 1/2 cups shredded cheese evenly over the top.
Air-fry for 1–2 minutes, just until melted. Don’t overcook or the cheese can turn oily.
Top with bacon and garnish. Scatter chopped bacon and sliced green onions over the cheesy fries. Add jalapeños if you want heat.
Serve hot with dips. Plate immediately and serve with ranch or sour cream on the side.
Eat while that cheese is perfectly gooey.
