Prep the apples. Peel (optional), core, and slice the apples thinly.
Aim for uniform slices so they cook evenly.
Mix the filling. In a bowl, toss the apples with brown sugar, cinnamon, vanilla, lemon juice, cornstarch, and a pinch of salt. The cornstarch will help the juices thicken instead of running out.
Pre-cook the apples (quick stovetop step, optional but recommended). Warm 1 tablespoon of butter in a skillet over medium heat. Cook the apples for 3–4 minutes, stirring, until slightly softened and glossy.
This jump-starts the filling so it turns tender in the air fryer. Remove from heat.
Warm the tortillas. Microwave tortillas for 10–15 seconds to make them flexible and easier to fold without cracking.
Assemble the wraps. Brush one side of each tortilla with melted butter. Place a line of apple filling slightly off-center.
Fold the sides inward, then roll up tightly like a burrito with the seam side down.
Brush and sprinkle. Brush the tops with more melted butter and sprinkle with a little cinnamon sugar if you like. This encourages a golden, crackly finish.
Air fry. Preheat your air fryer to 360°F (182°C) for 2–3 minutes. Place the wraps seam-side down in the basket, leaving space between them.
Air fry for 7–10 minutes, flipping halfway, until crisp and deep golden.
Rest briefly. Let the wraps rest for 2–3 minutes after cooking. The filling sets and thickens, so it won’t spill when you cut or bite.
Finish and serve. Dust with powdered sugar or drizzle with caramel. Serve whole or sliced on a bias.
Add ice cream or whipped cream if you want extra richness.
